Firstly, yes everything stops dead now with Norton security products; they do not continue with out of date definitions .... mallware is changing too rapidly for that to apply any protection to users ... and then Noron would be blamed.
So don't let your subscription expire!
Secondly, as long as your subscription is valid you are entitled to a free upgrade to the current V6 and after you renew to the next version which is under public beta testing as well.
Thirdly, if you shop around you can save money by not renewing online but by buying a copy of Norton 360 that matches yours forStandard (2 GB of free online storage) or Premier (25GB of free online storage) but it does not have to match the V5 or V6. I see it available from reputable stores and reputable online sources for about $30 for the Standard 3 PC version.
If you follow that route by it as soon as you see a good price and then a couple of days before your subscription expires just click on Subscription/Renew (not sure of the wording) where it shows you the days remaining and you should then see a link to Use Exisitng Key .... go to that and enter the key from the package you bought and OK your way out ....
No need to reinstall even if you are going from V5 to V6 since you can do that as a separate operation before or after using that key. The reason for waiting is that it is in effect a new installation and so any unexpired time is wiped out and not added to.
