Which of the above security options are better be active and what not to more security?

I did not understand your query correctly. I can provide you a small description of the features you have mentioned if that can help.
Caching--
This feature’s function is to store clean file
information at system shutdown and store it until
Auto-Protect is reloaded when the system is next
started.
When the system is started again, the information in
the operating system boot files and startup files is
compared to the contents of the cache. If the files
have been modified, then Auto-Protect scans them.
If the files have not been modified, then the files are
not scanned. This technique reduces or eliminates
the impact that scanning may have during a system
startup.
Limited Data Extraction.
Turn on this option if you want Norton AntiVirus to extract and scan a
maximum of 2 GB data from a compressed file. This way, Limit Data
Extraction prevents the scan to get stuck up with a single compressed file
that contains a large amount of data.
Automatic File Printer Sharing Control
Turn this option to automatically place your local network computers into a “Shared Trust”.

If a compressed file is larger than 2GB will complete verification?

What will happen if I switch off?
Generally what of these options think we ought to be active for more security?

Caching should be Off for more Security.
