I had lots of problems with the Identity safe opening, so much so that I created new Norton accounts under different email addresses and new identity safes and passwords. I think I now have a stable Norton account and identity safe. How do I delete previous Norton accounts and identity safes with stored data

You cannot delete the Norton Accounts, instead you can reset the identity safe vault associated with the Norton Account. You will have to login to those Norton Accounts from the product and reset/delete the identity safe data associated with the NA. Just login the NA & vault, goto settings and use the delete data option to delete the identity safe data.
