I have been seeing many complaints about users not being able to update to the latest version of iTunes (10.6.3) on especially Windows systems.
In case you are experiencing such an issue (and this was the case with my Vista computer and the solution worked for me), you can go over here and read how to restore the admin privileges to the Apple Software Update component - it won't list or install the updates unless it is run with administrator privileges:
