I faced the same problem when I wanted some prompts back, and I found the solution. You need to delete all entries (DWORDS) from the key HKEY_LOCAL_MACHINE\SOFTWARE\Symantec\SymConsent\Da

Thanks for finding and sharing this. Until it is exposed in our UI, we'll be sure to add it to our Known Issues/FAQ section.
Thanks,
Brian

We will probably add this feature in the furture, since there isn't a product UI other than the prompt itself right now. So the work around is delete all entries (DWORDS) from the key HKEY_LOCAL_MACHINE\SOFTWARE\Symantec\SymConsent\Da

I would really like this to contain some kind of history as well, so that I can see every app that has been launched, in what context, when, it's parameters and who (what account) launched it (if there are several admins on the system).
That would be useful when you think you've got some nasty stuff on the computer and want a list of everything that you have executed with elevated priviligies.

Excellent suggestion by Natanael.
{My Thought} If you plan to include this feature, you could make use of the Event Log; Create an Event Log category to store such data.

So you're a MVP, huh? :P (Just read about it on Google ;)
I always love feedback, just like everybody else.
And yes, using the built in logging in Windows would be useful. No extra applications would be needed to view the list of applications that have been executed in "elevated mode".
