How do I remove a specific file or folder from my backup?

Hi I am trying to work out a way to view my backups and identify specific folders or files that I no longer need to keep in my backup. These continue to consume space and I would like to remove them.
The Norton 360 interface does not appear to allow you to see what is backed up and then remove certain items if you no longer need them, which means the backup just keeps getting bigger. There is no easy option to view the files that have been backed up to see that the right things are being backed up.
I'm seriously considering whether Norton is the best solution for me based on this and what it costs. Never mind the constant upselling.
