I need to change my email. What is best way to do this...go in each site I have signed into and notify them I have changed it? Is this the safest way, or since someone knows my email now, is there a better/safer way where no one will be able to follow my change. Thank you.

As you suggest, you will need to contact all web sites individually to access your accounts and change your email address. For all your personal contacts you could send each contact an email. Or you could send one email out announcing the change, but putting their email addresses into the email as a BCC so every one else do not see each other's emails.
