Norton Core Router LAN ports

HI, I need to have more than 3 devices connected via RJ-45 LAN ports can I use an unmanaged switch to have more LAN ports?

Yes you can connect a switch to expand your network.

My modem is a gateway with 4 ethernet ports.  I assume I will connect the Core router to one of those.  Can I use the others for laptops that don't really benefit from the Core protection, since they are running the Norton software?

You can, but why would you.

Best practice would be to put the modem/router into bridged mode and use the Core as your primary gateway. Then connect your laptops via Wifi. That way all devices are protected.

I like the wired connection because it is faster on the LAN.  Even if I do use WiFi for the PCs, I am still out of ports, since I have 2 IOT hubs that have to be wire connected.  What happens when I add another one?

You can get a multi port switch that you can connect to the Core. Then you can connect your hubs and any other devices you need. And all devices will then be protected by the Core.
