While using a VPN product, you are tied to that service's DNS server settings. You can test by manually setting your DNS, then in a command prompt run ipconfig /all. Note the DNS settings. Then start up your VPN and run the command again. You should see different DNS settings that would correspond those of the VPN.
That depends on whether you are going to be using the VPN all the time. If so you might as well leave it as Obtain automatically.
If you will only use it selectively, you can choose a custom DNS provider that will be used when the VPN is not in use.
