Windows 11 in S mode? Deactivate? HP/Asus?

Hello!
So, shopping for either a laptop or Chromebook, under $300 price range, is not so easy...
There are various Black Friday sales regarding Chromebooks within my budget, under $300, yet I am NOT SURE if I want to be ENTIRELY at the MERCY of Google.
I bought an Acer Chromebook 315, 15.6" HD, Intel Celeron N4000, 4GB LPDDR4, Pure Silver, Chrome OS, CB315-3H-C19A from Walmart (online for $149 /instore $179)...still in box/unopened...not sure if its the right fit for me.
I am SO used to having Norton (NIS, Norton Security Deluxe, and now Norton 360) software installed on my PC laptops over the years...might feel naked without Norton!
Walmart online Black Friday sale offers HP Stream 14" Laptop, Intel Celeron N4120, 4GB RAM, 64GB eMMC, Jet Black, Windows 11 Home, 14-cf2121wm ($149 online reg $199)
and...
Target offers ASUS 15.6" Laptop with Windows 11 Home in S Mode - Intel Pentium Processor - 4GB RAM 128GB Flash Storage - Black - L510MA-TH21 for $149.99 reg $299.99
So, my question is can the S mode in HP/Asus laptop be deactivated?
I used to spend several hundred dollars on HP laptops, in the past, yet these days I am on a tighter budget (the high cost of living).
I am also more used to Microsoft platform (while preferring google), hence I don't know if I would take to a Chromebook the way "a duck takes to water!" (I also am SO used to using a wireless mouse)
I am, for the most part, a plug & play person (81 year Old Guy) concerned about Cyber Secuity while online.
Maybe someone on this forum has an idea on which side of the fence I should come down.
