Un-commanded scans against settings. Causing problems I DO NOT NEED

I am going to try and keep this polite, despite my ire and fury at finding Norton is living amongst the worst of the worst and overriding the choices of the end user, when that situation should NEVER have been allowed to exist and goes against the very nature of the ability to SWITCH SETTINGS TO "OFF".

THE PROBLEM

So, Norton decides it wants to run Anti-Virus scans when it deems fit, DESPITE the settings I have.
I have ALL scanning options OFF, and, other than those settings I require to be on (firewall et-al) everything is set to off until I CHOOSE to run a scan, which is NOT when the effing software **thinks** it wants to run a scan.
Even worse is the "I am going to run when you boot into your OS scan". Talk about slow down load times!!!!

A LITTLE BACKGROUND

I have a specific day of the week to go through my computers (I own several) and scan them with various software products to detect anything untoward. I therefore DO NOT have ANY interest in ANY software that IGNORES THE SETTINGS I CHOOSE and runs a damn scan anyway. I do this BECAUSE I DO NOT HAVE THE TIME TO DO IT AT ANY OTHER POINT IN THE WEEK!
I make the choices, not the effing software. These un-commanded scans are the singular reason I ripped out competitor software and now I find Norton software engineers think they know better than me and build the software in such a way as to ignore the effing settings set by the user (Yes, I know WTF I am doing with my machines and how to effing to look after them, I am not an effin idiot).

Yes, I am beyond peed off at this, to the point of ripping the whole lot out of every device and DEMANDING a refund because the software IS NOT PERFORMING AS IT SHOULD DUE TO IGNORING THE SETTINGS NOT TO SCAN AND NOT TO SCAN ON A SCHEDULE AND IS THEREFORE NOT FIT FOR PURPOSE.
THIS IS NOT A "THE SOFTWARE DOING ITS JOB ISSUE", THIS IS A "THE SOFTWARE COMPLETELY IGNORING THE SETTINGS AND CAUSING UNDUE STRESS ON MY SYSTEMS AT THE WORST POSSIBLE TIMES AND SLOWING MY WORKFLOW DOWN DUE TO HAVING NO CONTROL TO STOP THE SCANS, THEREFORE HAVING TO WALK AWAY FROM THE MACHINE UNTIL THE UN-COMMANDED SCANS ARE COMPLETE"

Is there ANY way to stop these un-commanded scans from occurring and the software actually working as it is supposed to?
This is NOT just an issue on MacOS either, these un-commanded scans are running on Windows and Android too, despite the settings.

WHAT I WILL NOT BE DOING

I AM NOT going to uninstall, then reboot, to reinstall the software. Been there, done that, nothing changes, not even the broken VPN (yet another issue that makes the software NOT FIT FOR PURPOSE.
I AM NOT Going to "Supply contact email or telephone number" to Support. Been there, done that, been hounded for months afterwards. Nope, NOT going to happen!
I AM NOT Going to contact first level support. They are next to useless, reading only from scripts and trying to double talk their way out of the conversation or try to make you out to be the idiot when they do not understand what you are talking about.
