My history shows liveupdate functioning normally as of 05-30-2023. Did you in any way turn off liveupdate for some reason?

Your LiveUpdate log has reached 14 pages. Try clicking the Clear Entries button to see if that restarts your logging.
I no longer use Norton on my Win 10 machine but I've seen this happen with older versions of Norton - see my 17-Apr-2018 post in Inquirer's Intrusion Prevention is Not Enabled where I noted that "I've noticed that the entries in Antiphishing, Intrusion Protection, and certain sections of my security history sometimes stop logging after a maximum number of entries is reached (e.g., 10 pages, 20 pages, etc.) and I need to clear the entries to get newer entries logging again." As far as I know once the log reaches a maximum size older entries are supposed to be purged to make room for newer entries, but sometimes this doesn't happen.

Are your Automatic LiveUpdates running to completion?
I used a legacy Norton Security v22.15.5.40 product on my old Vista SP2 machine so the screenshots and folder paths below won't look identical to what you should see if you're using a Norton v22.23.5.106 product on your Win 11 computer, but if I opened my Background Tasks windows (Settings | Administrative Settings | Background Tasks | Configure) I could see the Last Run times and Status of all my scheduled background tasks, including my Automatic Live Updates (the old image below was captured on 25-Aug-2019) ...
... and if I browsed to C:\Program Files\Norton Security\NortonData\<version number of last clean Norton install>\Definitions\SDSDefs there would be a new subfolder created every time the virus definition set was updated during an Automatic LiveUpdate. According to the Broadcom site at https://www.broadcom.com/support/security-center/definitions?pid=sep14 the latest File-Based Protection / virus definition set released for Symantec Endpoint Protection 14 (the closest match to Norton home consumer products) is currently version 20230627.007 (i.e., revision 7 for virus definitions sets released on 27-Jun-2023) so you might see a subfolder in your C:\Program Files\Norton...\Definitions\SDSDefs folder named 20230627.xxx if your virus definitions were actually updated today. From an old image I captured on 25-Aug-2019 showing my virus definition set was created on 24-Aug-2019.
