After consulting with Norton's help desk numerous times I have confirmed Norton's cannot auto update virus definitions. I have to do it manually. Amazing.
There are usually daily (or even more frequent) updates for many of Norton's protection components and also occasional updates for the product itself. Automatic LiveUpdate will download and install all of them, as it checks for updates hourly. If you run LiveUpdate manually, you will often get newly released updates before the automatic LiveUpdate does. It is simply a matter of there being many updates that are released continuously throughout the day. Sometimes manually checking will grab some before the automatic update does. (credit SendOfJive)

Then why do I have to do it sometimes?
sometimes a patch is only available thru LiveUpdate...at that time. for example:
3. How can I manually install these patches?
This patch is ONLY available via LiveUpdate, and is being released in a phased manner. You may need to run LiveUpdate and reboot a few times before your product is completely updated to the latest version.
Note: receiving an update thru manual run LiveUpdate does not mean Automatic LiveUpdate is not working.
Keep your Norton device security up to date

When I do it manually it shows completed in green ticks. History shows completed. Interestingly I noticed in history it must auto update sometimes, like this morning for example. Then why do I have to do it sometimes?
What does your history show about updates? Does it say something like update failed?
Please post a screen shot per BJM's post and instructions above.

Yep. Mine is the same as pic. BUT it will not auto update. Norton help desk states that this most basic of features is not available using Norton's.
Hey bjm_. My Norton 360 Deluxe II auto update is turned on. It doesn't look like your version however. Under settings-Antivirus-Updates
