Normally whenever I click Full Scan, norton 360 scans a total of 900,000 items or more. And it usually takes about 2.5 hours to do the full scan. Well this last full scan it only scanned 202,000 items and was done in 15 minutes. I am concerned that I did not get a complete scan of my whole system. My dh is not as prudent on the computer so I tend to run scans weekly just in case. What could be the problem.

Do you have skipped files during the scans?

You could look at message 53 on the above link from a Symantec employee on why this happens.
