Excluding lower level folder from backed up folder

I want to back up my documents folder, but within it there is a large folder which I do not want backed up. How do I exclude this lower level folder. Also, how can I exclude a single file from backup in a folder which is backed up
did you try Folder - three dots → Add to exclusions
did you try File - three dots → Add to exclusions
