help with Ghost 15 file & folder backup/restore

Let me briefly explain my situation.  I have 8TB of disk space on my main PC that acts as a media server - 2 pairs of 2 disks, each in RAID0, and then the 2 RAID0 'disks' spanned in WIndows 7 x64 to form 1 drive.  This is all on an ICH10R controller. 

 

Originally I wanted to do an image backup of the 8TB using Ghost 15, but when I first went to define the new backup and selected Backup My Computer, the spanned drive didn't appear.  I assumed this had something to do with the drive setup.  I just settled for file and folder backup at the time. 

 

Now I have one of my 4 drives failing.  My plan is to kill the RAID0 arrays, replace the bad drive, rebuild the RAID arrays, span them again and then restore my files. The first time that I actually looked into using the recover files function I couldn't believe how archaic and tedious the process appears to be.  I was expecting 'one click' restore and files and folders are back to where you had them in whatever destination you point the software to.  Instead it looks like I have to remember what files and folders I had (thousands of them) and then search and restore each one or try some creative searching to restore by group.  Not to mention, with incremental backups performed, I now see previously deleted files in my backups that I don't want restored.  All I want to do is restore my files and folders to the way they are RIGHT NOW on my drive, once it is rebuilt.  Is there actually a simple way to do this?  If not, are there any alternatives that anyone can suggest?
