I would like to base my backup on just certain Folders. How do Exclude everything else without having to do each folder manually ?

As you want only the folders and files you choose, from the first image in bjm_'s first post, be sure you turn off all the pre selected file types. Pictures, Music, Financial files, etc. Then you can use the instructions bjm_ provides to select the folders and files you want to back up.
Users may Create New Set/s with files and folders to users' preference.
Users may Delete DefaultSet (after setting up new set).
for example:

The Add to Backup and Exclude from Backup options appear in the shortcut menu only after you configure your backup and when the Backup Settings and the Restore Files windows are closed.
