Welcome to the Norton Community Forums.
That is a good question and the first time I can recall it being asked, so forgive me if I feel my way to an answer...
I believe that the email address is the one associated with the product when you registered it at mobilesecurity.norton.com. It is not possible to change the email address there as far as I am aware as this just picks up on the standard email address and password used on all your Norton accounts. So I have to ask - do you have other Norton accounts e.g. for N360 or Norton Internet Security?
Whether you have or not you should be able to log into your Norton account management page using the email address and password that you are currently using for NMS. This page should enable you to change your email address. Once changed I believe that this will be reflected across to the mobilesecurity.norton.com website.
What this will do to NMS on your phone I do not know but suspect that it will fail to log in when it next tries to check with the server. Hopefully it will just ask for you to reconfirm your details and all will be well. If that does not work you may have to uninstall NMS from your phone and then delete the old account on your phone from the mobilesecurity website and then reload the app again.

Yes this seems to be the way to go. I changed email address via my Norton Account and then NMS required new details as registration had changed. Good solution.
Whether it is worth making email address change a facility in NMS settings I am not sure. I suppose if someone had already got access to the phone it would be a security risk but on the other hand it would be a convenience if anyone has to change email details.
