I also have an older image of the system which was created with RAID drives.
Can I somehow first copy just the MBR from the older image onto the newly created RAID set, and then restore the image of the current system?
Will taht result in a functioning new system with RAID enabled?
Just received verification that you can do the restore that you've outlined in the first post. The main question will be if you have the necessary drivers. You may need to install Ghost and create a customer recovery disk through the program so you can add your RAID drivers.
I just tried your suggestion.
1. I created a Ghost recovery CD with nVidia raid drivers included (verified!).
2. Created recovery point using Ghost (image includes proper raid drivers).
3. System is running fine with RAID disabled in the BIOS.
4. When enabling RAID in the BIOS, booting results in an error message: "DISK BOOT FAILURE, Insert system disk..."
5. Trying to use Ghost's Recover my computer results in STOP 0xD1 nvidiaraid.sys...
6. Disabling RAID in BIOS, Recovered my computer using Ghost, now system boots fine
This is NOT a hardware problem, same results on 2 identical motherboards, all disks and memory check out fine.
What is the conclusion?

To verify, you created the image, set the BIOS to enable a mirrored array, received the DISK Boot Failure error, attempted to load from the recovery disk and received the STOP error?
What RAID controller are you using? What's the version of the nvraid.sys driver that you have? I'm assuming this is a Hardware RAID and not a software RAID, is that correct?
Yes, your understanding is correct. And when I disable the RAID1 in the BIOS everything returns to normal.
nvraid.sys version I am using is 5.10.2600.667 (or .699) I am not sure where on Ghost recovery disk the file is located so I can not confirm which is on the CD itself. On my computer it is the first and when I run Ghost's Driver Validation it results in "All detected storage and network cards have drivers in the Symantec Recovery Disk".
Can you go to the NVidia site and ensure that you have the latest installed? I’d then create a custom recovery disk using that set of drivers.
I created a rescue disk with latest nVraid.sys drivers on it.
Using it, If I try to restore my computer after selecting the restore point it does NOT list my RAID1 HD as a destination drive, even though that in BIOS it is fine and Paragon Partition manager sees and formats the drive properly (and the partition is active).
when I try to "Explore my computer" the RAID HD is not listed there.
how to you force Ghost to rescan the drives?
Also, just this operation seems to corrupt the RAID structure. The BIOS flashes "RAID degraded" when rebooting afterwards.
It does not seem that Ghost does much good when you really need it.
one more point: when clicking "Load Driver" the RAID HD drive IS listed as possible source drive but, when trying to "Restore my computer" it is NOT lissted as a possible target (all that is listed is my external SATA) and some unallocated 2.49MB on teh same drive.

Is this all within the recovery environment or while within Windows? The recovery environment uses the Windows Vista version of WinPE. The act of going into and out of the recovery environment should not affect the array. Something very odd is going on here. Try running Partinfo (it'll be in a Utility folder under the Norton Ghost folder). It'll create a text file with results.

Given my poor experience with Ghost I am a bit leery trying to do anything with it. I have just spent a week reinstalling Widows and all my applications from scratch.
If using it will disrupt my RAID again and I have no way to restore a recovery point I am not sure what to do next.
