How to turn off Norton 360 while upgrading to Windows 7, and then turn Norton 360 back on

I want to upgrade my PC from Windows Vista to Windows 7. The instructions from Microsoft state:

"Update your antivirus program, run it, then turn it off. After you install Windows 7, remember to turn the antivirus program back on..."

How do I turn Norton 360 off, and then turn it back on again after the OS upgrade?
