I am running Norton 360 2.5.0.5 and would like to turn off outbound email scanning. Can someone provide the steps to do this?
1 Start Norton 360.
2 In the Norton 360 main window, click Settings.
3 In the Detailed Settings window, click Virus & Spyware Protection Settings.
4 In the Automatic Protection Settings tab, uncheck Turn on Email Check.

Thanks to both of you for your help. I will upgrade to 3.5 and change the setting.
Please tell us how it goes

I appreciate that you have decided to update to the 3.5 version. The steps to disable email scanning in Norton 360 3.5 differ from 2.0. The steps are:
1 Start Norton 360.
2 Click Settings.
3 Click Antivirus.
4 On the Scans and Risks tab, if the Email Scan shows Off, click the status indicator to turn it Off.
5 Click Apply, and then click Close.
When you turn off Email scanning, Norton 360 will show you an "attention needed" or "Fix now" button. to ignore this, please follow the steps:
1 Start Norton 360.
2 Click Settings.
3 Under Detailed Settings, click Administrative Settings.
4 Under Product Security, next to Product State Monitoring, click Configure.
5 Under Antivirus, uncheck Incoming Email Scan and Outgoing Email Scan.
6 Click Apply > OK.
7 Click Close.
BTW, can you tell us the reason why you need to disable the Email scanning feature.
