Please pick the proper Norton product that you want to remove. Also please be aware that it will remove all Norton products, so back up Identity Safe using the program to back that up. Also please have your product key handy. This is just to add on to Yaso's excellent instructions.
If you did any banking with your old laptop, you should notify the banks involved also and change passwords, same procedure just about if you lose your wallet. Just a little additional advice if it's needed.
Sorry to hear your news -- some laptop manufacturers have a system for recording the details of a stolen laptop so that if the theif or a subsequent purchaser sends it in for service they may spot it and take action so it's worth checking with them.
One thing I do with all the laptops I have or have purchased for family members is to photocopy the bottom side of the laptop so that I have a piece of paper with all the details of model number and serial numbers etc! Keep it in a safe place apart from the computer ....
