Need help disabling "features"

First, I'd like to know how to keep Norton Internet Security Suite from scanning my network file shares. One of them may be running Win98 and thus I'm limited to Avast antivirus, but it still has its own antivirus. I dont' like it tying up my bandwith to scan network shares. How do I stop this? They are NOT "mapped network drives". They are network shares that I haven't bothered assigning to a letter. Assigning a letter and putting the letter in the exclude path has no effect, since it still goes in via the Network hierachy. It seems to brows for any discoverable shares and scans them. VERY annoying and a wase of network resources.

Second, I'd ilke to know how to reconfigure the real-time protectino to ASK me what to do with an infected file before deleting it automatically. Right now, it's deleting things, then SOMETIMES telling me about it with a dialog box, that sometimes stays minimized until I notice it among the numerous open windows. I can't even find a "quarantine" as they seem to be deleted.

I had a problem with it going to my network share on another computer and deleting an old file because it thought it had a virus. This file had been there since 2006 and had been scanned over the years by AVG free, McAfee, and Avaast. Depending on when support for Norton 2001 was dropped, it might have even been scanned by that. Yet suddently it is a trojan in 2010? I don't think so. I was upset that I tried to restore from a backup on the local machine, and then Norton reached out accross the network from a client computer and deleted it. I had to change the share for that particular folder to read-only which was a pain since it was win98 and lacked NTFS permissions and the folder was a child of a larger read/write share.

Third, I'd like to ask how to turn off the idle-time scanning and defragmenting. I'd like to decide when to do that. Having my computer's fan suddenly kick into high gear while the hard drive starts grinding while I'm watching a tv show on my old computer makes me think somebody's managed to break into my comptuer and is doing something they shouldn't. I run the scans and defrags montly, and scan all new software. That should be enough. The only thing I'd possibly want it to do in idle time is check for updates, and that is optional as long as it checks for updates once a day at say startup, much like Windows Update.

Finally, and I apolgize in advance for any rudess, but  please do not reply back with condescending statements about why these are good things and I shouldn't want to turn them off.  Just tell me how to accomplish my goal.

I apologize for the rudeness of this last statement, but I've had problems in the past with jerks making such comments and derailing the thread rather than getting my questions answered, and thought I'd head them off before they get started.
