Need help removing a Google Chrome Extension named "Shampoo"

I recently discovered an extension in my kid’s Google Chrome account named “Shampoo.” It reinstalls itself when removed, it keeps shutting and restarting Chrome, it has switched the browsing engine to Bing; and when opening youtube, I can only view one video.
This extension appeared after my kiddo downloaded some game “infusion hacks” from Github. Sigh. I deleted all browser history, all User app data for his username, and rebooted but Shampoo remained. I just uninstalled Chrome, and then ran a scan - Norton didn’t find anything. Is the next step to download and run Malwarebytes? Or are there other recommendations? Please advise and thank you.
