Ok so I have tried these steps and although my file sets were smaller I do so a couple of issues that are more like design issues more than full blown bugs.
Let me explain, first there is a scan that is running when you remove or add items, until that scan is complete, the numbers reflected next to the categories is not 100% accurate. Also to that, we don't calculate the "excludes", the files you deselected, until the end of the scan as we didn't want the size to go negative, which would look bad.
You are correct that from the backup UI you cannot remove a folder that was added, however, you can right click that folder in explorer and "exclude" it, which will remove that folder from the backup set.
Note: that if you have already deregistered the buShell.dll, you will not be able to do right clicks
Hope this helps, my suggestion is to try this on a smaller backup set where the scan doesn't take as long and you will see that the results are what you expect.

Thank you, once again, for speedy response. I can see what you mean about it taking its time to calculate the size correctly.
Both these particular PC's are super fast. I am able to save settings and exit whilst the numbers are wrong, but this is indeed minor and resolved the next time once goes into 'Manage Backup'.
Now that I understand about removing folders and why I couldn't, I fully accept that this problem was "by design".
I'm also going to suggest that perhaps the crashes are related to the scan and actions that I take before the scan completes. In any event I have no will to investigate further. I am happy to close this. Big thank you, and I'm suitably red faced.
