Norton Utilities Ultimate deleting saved scanner profiles

I recently "upgraded" from Norton Utilities Premium to Ultimate (side note: Not impressed. Would go back to Premium if I could). 

Now when NU cleans up my PC, it also deletes all the saved profiles within Windows Fax and Scan. These are saved profiles that allow you to make and keep preset values for type of document being scanned, color vs black and white, paper size, flatbed scan vs feeder, etc.

It turns out NU deletes these files within the "Program Temp Files" section of it's settings. I tried unchecking the box so that NU will not delete those files, and that works for when I do a manual scan--but when NU does an auto scan each week it still deletes them.

The scanner profiles are contained within C:\%USERPROFILE%\AppData\Local\Microsoft\UserscanProfiles; they are all named SCANPROFILE(x).XML, where x = a sequential number used to delineate multiple scan profiles that you've set up (for example, one for plain documents, one for images, etc.) It doesn't matter what you name the profile within the Windows Fax and Scan app--Windows saves it using this convention instead. 

I would be grateful if anyone can share a method to consistently keep these files form being deleted. Right now, my workaround is that I saved a copy of the XML files to another location, and then wrote a batch file that copies those back into the above location to restore them.
