When you schedule the full system scan, Norton should remind you that the Idle Full Scan is currently turned ON and will ask you to turn it OFF since you do not want to have both on at the same time. Be sure and let this happen and don't enable the Idle full scan in settings unless you want to use that instead of the scheduled system scan.
For completeness, which Norton product do you have and what is the version? The version can be found in Help & Support > About or Support > About depending on the product and version year that you have.

While mdturner is certainly correct that you should scan as often as you feel is necessary, current protections built into Norton products make Full System Scans less important than they once were. As explained by Symantec employee, PieterV, in the following two posts, Norton's Idle Quick Scans and other features will protect you from active threats. Full System Scans primarily serve to detect inactive or dormant threats that may be present.

How do I stop daytime back ground scans of my computer?
I have it set to scan at night but for some reason it scans during my work day also. which slows down my computer. I have looked everywhere I can think of to turn this of, but no success as of yet.

Which Norton product do you have and the version? The version can be found from Support > About or Help & Support > About depending on the product and year version you have. Also what version of Windows and SP (service pack) do you have and is it 32 or 64 bit?
The Idle Time Scans can be turned off from Settings > Computer Settings > Idle Time Scans and set to OFF. The path to these setitngs is assuming you have NIS. The path will be slightly different with N360 I believe.
Note that this setting only applies to Idle FULL system scans. Idle Quick Scans will still run periodically after new definitions are downloaded. The Quick scans are very fast and should not slow down your computer.
Please confirm that you have a schedule for running full system scans since you do not want them to run on their own.
