I have just purchased a replacement computer for my current desktop. It will be able to run NIS fine, so I am not worried about that.
My one question though is whether or not I can use my current key that I used to install 2011 a few weeks ago, for my new computer.
I would remove norton from the old computer, thus removing the use of the key - does this make it "available" to be used again?
Originally I purchased NIS 2006 (from memory) and have long since lost the CD's. Each year I renew my subscription and periodically upgrade NIS versions. Just a few weeks ago I upgraded to 2011 from the 2010 version. I have keys in a .txt file in my "Symantec" folder.

Yes indeed you can reuse your key on your new computer. When you uninstall it from your old computer you should so while connected to the Internet which will allow it to communicate with the Symantec server and register the fact that you have now removed it. When you install on your new computer you should register/activate using the same email account from your Norton Account and you can activate with the same key you are already using.
If you want to transfer your Identity Safe settings (logins, etc) from your old computer to your new computer you should back them up per the procedure here. You can save the backup to a USB flash drive or other external media and use it to restore this data to your new computer if desired, after NIS is installed.
You should make note of your product key from the text file you referenced or you can also retrieve it from your Norton Account.
You should download the latest version of NIS 2011 from here and use that to install on your new computer. Please note that this is the English version, please let me know if you need a different language and I will provide the appropriate link for you.
After you install NIS 2011 on your new computer you should run live update repeatedly (rebooting as requested) until it reports no more updates are found.
Also what will you do with your new computer? Is it to be retired altogether or will you be using other security software on it or what? If you will be installing other security software you should run the Norton Removal tool twice with a reboot in between each run to make sure NIS is completely removed from it. This should be done after the conventional uninstall mentioned earlier.

can follow the instructions provided by Allen, a small correction where you
will not have the option to register to the email account as your product key
is already registered to Norton Account.

A related question - I have a 3PC licence, however one PC died on me and has been recovered (aka HD system wiped and reloaded), however I cannot work out how to reused the product key, otherwise I have a continuing subscription for 3PC, but only able to use it on two PC.
Please run live update until no more updates and then reboot.
When you get back on the net, it should ask you for your key.

I think what you need are the KEYs not what Support / About shows as Product Serial Numbers if you need to reactivate a new installation from media or a new download on new systems. But if you follow Peter's route of using Norton Management and download from it using its Download button then the download comes preactivated.
But you need your Norton Account login information -- email address and password -- to get into your Norton Account and then Norton Management if I rmember correctly.
I have 2 copies of Norton Internet Security which means I have 6 installs available. I have 5 computers and only 3 have NIS installed. The other 5 installs were consumed during various crash recoveries over the years. I would like to clean up the installations and install NIS onto each of my 5 computers with a spare install for a future computer. I do have the 2 Product Serial Numbers for the 2 copies of NIS I have.
