Admittedly, I'm not familiar with this and don't know if I'm even using the terms correctly, but is it possible to bypass safety minder using a proxy of some kind so that internet activity cannot be traced? It's difficult trying to track kids that are more computer savvy than me and I'm just wondering if they could be using something like this to hide their activities. I know they can be used to override security blocks, but I'm not worried about them accessing blocked sites if I can still see a record of it. Just wondering if I would be able to tell on safety minder if this is what they are doing.. Any related advice would be much appreciated!!

First, you described your concern clearly and certainly sounds like a pro to me :-)
Please have the category of "Web proxies" selected to be blocked at "Check each Site Category below that you want to block from XXX" section under Settings -> Web.
