Even If you turn off every component manually, NIS processes are still active. There is no way to disable the program completely
Even so, you are still putting your computer At Risk of Threats. Maybe you should Turn Off all of your Internet Security, which I assume is Norton, for a week and see if you stay un-Infected. Un-less, of course, I have mis-understood what you mean. Bleh.
Is there a way to disable Norton Internet Security (NIS) as a whole (like some master disable button)?
I have been using NIS for years now and one thing a routinely do is disable NIS. I consider myself to have above average knowledge of computer security and maintenance, always trying to disable unnecessary programs running in the background unless they are needed. As time goes by and my computer gets older, it starts to feel the strain of new programs/games requiring more resources. As a gamer, I have to disable all (or mostly all) NIS functions and other computer programs while running a game so the computer can run at its optimal. Only when I am playing a multiplayer game do I allow the firewall to still function. What routinely get me frustrated is going through every single NIS function (auto-protect, firewall, email scanning, and so on) to disabling them; all the while setting them to restart at system startup. There are also many games out there that ask to disable your virus programs while playing the game if you should experience below average performance.

What game are we talking about? This is the first time I hear that NIS is interupting
I wish Symantec would bring back the option to block and unblock network connections from the taskbar icons. I used to use this whenever I wanted to play a full screen single player game. It appears they for whatever reason decided to remove that from the 2008 versions. Its more of a inconvience to have to go into the device manager or open the Network sharing center to disable the ethernet port. Also whenever you might suspect that autoprotect hasnt stopped a malicious program or etc from connecting to the net you had a quick and easy access to stop the flow of network traffic.

What is exactly interupting?
There is no "master disable button" for N.I.S. 2008; you have to Turn everything Off manually.
However, this is not adivsed, whether it be playing a game or doing some other computer activity because you are putting your computer At Risk of all Internet Threats which means your computer is most-likely Infected.
