Several times over the last few months the Norton Driver Updater( 25.1 build 6020) has indicated the bluetooth device driver on my Wndows-11 Dell XPS896 desktop system was out of daate. When I run the update the new driver is installed without any error but the bluetooth devices (wireless mouse and headphones) on my system do not work after rebooting. If I go to update history and regress to the previous version they work perfectly.
Maybe, you’ll be helped by documenting this issue via Norton support.

FWIW Most here recommend against using the Norton Software and Norton Driver Update features because of results like you found. You are better off just letting Windows Updates take care of the system drivers.
