Norton 360 not backing up all Outlook files & not restoring files to orig place

Hi,

I created a Back-Up for my sister using the Norton 360 and made sure that the back-up included email and contacts.  Email she uses is Outlook 2013.  Her computer had to be completely wiped and the guy reinstalled Windows 7 Home Premium for her (same as before).  I reinstalled Norton and the complete Office 2013 which includes Outlook and found the back-up which is on a Western Digital external hardrive and asked Norton to restore everything using that back-up to it's original place.  It restored fine except:-

1) All files restored were placed in a folder called "username" with a direct access on the desktop.  It didn't put what was in My Documents back or what was in the desktop back either.  Everything in that folder.

2) All my Outlook contacts and Folders and emails that were in those folders were not restored. The only things restored into the Outlook were emails that had already been eliminated and that were in the inbox which I presume were still on the server and is why there appeared.

3) I went into C:/username/app data/microsoft/outlook to try to find the .pst or .ost files but when done via Outlook it says that there are no Outlook Data Files there and when you go through the explorer they are.
