I have had issues with email because Gmail sees you are trying to access your account from somewhere they do not expect. So they either request additional verification that it is you, or they block access.
Here is a Norton Support article on the VPN settings for iOS and Android. You will see that there is a Split Tunnel feature in the Android version but not the iOS version. If your device is Android, you could use that feature to automatically bypass the VPN for any apps that need to access the internet that do not work with the VPN active.
